The push for the use of mushrooms as main entrees in plant-based diets is growing, and people are reaping the benefits of consuming important nutrients like fiber, potassium and vitamin D.\u00a0<\/p>\n\n\n\n<p>There is more research still to come on mushrooms&rsquo;
