New research has found that adding a mushroom serving to your diet could increase your intake of several micronutrients, including shortfall nutrients such as vitamin D, without any increase in calories, sodium or fat.
Mushrooms are known to most people as vegetables, but in fact, they are a member of the third food kingdom – they are biologically distinct from both plant and animal-derived foods. The push for the use of mushrooms as main entrees in plant-based diets is growing, and people are reaping the benefits of consuming important nutrients like fiber, potassium and vitamin D.
